Here is a simple recipe for sweet potato pie. I will give tips after the recipe!
- One pie crust of your choice.
- 1 3/4 Cups Sweet Potatoes, cooked and pureed* or 1 15oz can
- 2 Eggs
- 1 Can of Evaporated Milk
- 1/2 Cup Sugar
- 1/3 Cup All Purpose Flour
- 1 tsp ground Cinnamon
- 1/2 tsp ground Ginger
- 1/8 tsp ground Cloves
- Preheat oven to 425F. Get you pie pastry in the pie pan and bake for 12 minutes with a sheet of tinfoil over it.
- Combine the eggs and sweet potato. Add remaining ingredients and beat til smooth. pour into pie crust.
- Bake for 15 minutes then reduce the oven temperature to 350F and bake for another 45 minutes.
This pie is great with whipped cream or even a dollop of vanilla ice cream.
* The Sweet potatoes can be replace with pumpkin.
When cooking fresh sweet potatoes you can boil them with the skin on to save time. Just wash the potatoes and boil them until you can easily pierce all the way into it with a fork. Drain and let cool. The peels will slip right off the sweet potatoes. Use a food processor to quickly puree them.
This pie works great with most types of pie crusts. If you decide to use a frozen pre-made crust, make sure to let it thaw completely before trying to work with it.
